Glycidol fatty acid ester is produced during the deodorizing of diacyl glycerol oil production. Glycidol is classified by the International Agency for Research on Cancer (IARC) as being "Probably carcinogenic to humans" (Group 2A), but data on the carcinogenicity of glycidol fatty acid ester are not disclosed. The Japanese Food Safety Commission concluded that "efforts should be made to reduce the risk as far as reasonably achievable" in respect to glycidol fatty acid esters. In recent years, studies on reducing glycidol fatty acid ester in foods are being conducted globally.*1
