Using immunochromatography, this kit detects shrimp and crab allergens in processed foods. Compounds contained in shrimps and crabs are the most common causes of food allergy in adults. Due to the tendency for serious symptoms to develop, in Japan, these compounds became subject to mandatory labeling in June 2009. The kit detects crustacean proteins using tropomyosin (TM), a major allergen of crustacea (shrimps and crabs), as an indicator.
